INGREDIENTS
- 1 cup granulated sugar
- 1 cup light corn syrup
- 1 1/2 cups creamy peanut butter (not all-natural peanut butter)
- 2 9.25 bags of corn chips
- 1 cup semi-sweet chocolate chips
- 1 cup butterscotch flavor chips
INSTRUCTIONS
- Grease a 9 X 13 inch baking pan. In a medium sized saucepan, combine sugar and corn syrup. Cook over medium heat, stirring constantly, until sugar dissolves and mixture comes to a boil.
- Remove from heat. Stir in peanut butter until mixture is smooth and thoroughly combined.
- Pour corn chips into freezer ziplock bag and seal tightly. Lightly crush them with your hands or a rolling pin.
- Add chips to the peanut butter mixture and stir until well-coated, breaking up the chips as you stir. Transfer mixture to prepared baking pan. Place a piece of waxed paper over the mixture and press down to make a firm, even layer.
- Combine chocolate and butterscotch chips in a small microwave safe bowl. Microwave on high for 30 seconds and stir. Repeat for another 30 seconds and stir again. Continue cooking in 10 second intervals until mixture is melted and smooth.
- Pour over corn chip mixture in pans and spread evenly.
- Let stand 2 hours or until firm. Cut into bars.
- The bars must be stored in an airtight container inside the refrigerator to maintain freshness. The bars may also be frozen for up to 3 months.
