INGREDIENTS
- 1 (16 ounce) package ready to bake sugar cookie dough
- 2 (8 ounce) containers whipped cream cheese
- 2 large eggs
- 3/4 cups granulated sugar
- 2 teaspoons McNess Champion Madagascar Vanilla Compound
- 1/4 teaspoon salt
INSTRUCTIONS
- Preheat the oven to 350 degrees F. Line a 9X9 square baking pan with parchment paper or spray with baking spray of your choice.
- Add the cookie dough to the bottom of the pan and use your hands to gently press the dough evenly to cover the bottom of the whole pan.
- In a large bowl or stand mixer fitted with a whisk attachment, beat together the cream cheese, eggs, sugar, vanilla and salt until smooth.
- Pour the cheesecake mixture over the top of the sugar cookie dough and spread it out evenly with a spatula.
- Bake for 45 to 55 minutes. The cheesecake should have a slight jiggle at the center of it.
- Place the pan on a wire rack to cool for 1 hour.
- Transfer to the refrigerator and chill for at least 4 hours before slicing.
- Top with your favorite fruit compote, syrup, pie filling or sauce.
- Makes 9 servings.
