Sugar Cookie Cheesecake Bars

INGREDIENTS

  • 1 (16 ounce) package ready to bake sugar cookie dough
  • 2 (8 ounce) containers whipped cream cheese
  • 2 large eggs
  • 3/4 cups granulated sugar
  • 2 teaspoons McNess Champion Madagascar Vanilla Compound
  • 1/4 teaspoon salt

INSTRUCTIONS

  1. Preheat the oven to 350 degrees F. Line a 9X9 square baking pan with parchment paper or spray with baking spray of your choice.
  2. Add the cookie dough to the bottom of the pan and use your hands to gently press the dough evenly to cover the bottom of the whole pan.
  3. In a large bowl or stand mixer fitted with a whisk attachment, beat together the cream cheese, eggs, sugar, vanilla and salt until smooth.
  4. Pour the cheesecake mixture over the top of the sugar cookie dough and spread it out evenly with a spatula.
  5. Bake for 45 to 55 minutes. The cheesecake should have a slight jiggle at the center of it.
  6. Place the pan on a wire rack to cool for 1 hour.
  7. Transfer to the refrigerator and chill for at least 4 hours before slicing.
  8. Top with your favorite fruit compote, syrup, pie filling or sauce.
  9. Makes 9 servings.
