Old-Fashioned Southern Style Tea Cakes

INGREDIENTS

  • 3 cup self-rising Flour
  • 1 cup (2 sticks) salted butter
  • 1/4 cup butter flavor shortening
  • 2 1/3 cup granulated sugar
  • 2 eggs
  • 2 teaspoons McNess Champion Madagascar Vanilla Compound
  • 1/4 teaspoon lemon extract
  • 1/4 teaspoon nutmeg
  • 1 tablespoon of milk

INSTRUCTIONS

  1. Cream butter and sugar together for 2-3 minutes using a hand mixer.
  2. Add in eggs mixing until smooth for about 3 minutes.
  3. Add in extracts and nutmeg then blend for another minute.
  4. Add in flour blending just until just moist (If batter is dry add I tablespoon of milk).
  5. Turn dough onto a smooth surface and knead until dough is soft. Shape and cover in plastic wrap.
  6. Refrigerate for 1 hour or freeze for 30 minutes.
  7. Preheat oven to 350 degrees. Remove dough from refrigerator. Use a round spoon or pull off dough and roll into a ball.
  8. Place on a cookie sheet 2 inches apart.
  9. Bake 8 to 10 minutes until bottoms are lightly golden brown.
  10. Remove from oven and let cool on wire racks for 5 minutes and then move them to cool completely on the wire racks. Enjoy!
