INGREDIENTS
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 2 eggs
- 1 cup sugar
- 4 very ripe bananas
- 1 teaspoon McNess Champion Madagascar Vanilla Compound
- 1/2 cup vegetable oil
- 1-1/2 cups chopped walnuts or pecans
INSTRUCTIONS
- Preheat the oven to 350 degrees F.
- In a medium bowl, combine the flour, baking soda, baking powder salt and cinnamon, set aside.
- In a large bowl, cream together the eggs and sugar.
- Stir in the mashed bananas, vanilla and oil.
- Stir in the flour mixture; a third at a time until it is just combined.
- Stir in the walnuts or nuts of your choice until just combined,
- Pour the batter into a 9X5 inch load pan.
- Bake for approximately 55-60 minutes; test with a wooden toothpick. When it comes out with very few crumbs, it is done.
- Let cool on a wire rack for approximately 20 minutes then turn onto the wire rack to cool completely.
- Serve with warm butter, honey or your favorite preserves.
- Store in airtight container for up to 7 days.
Optional
If you prefer pecans instead of walnuts or another favorite nut, you may substitute or if you prefer raisins, add one cup to the batter before baking.
