Old-fashioned Banana Nut Bread

INGREDIENTS

  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 eggs
  • 1 cup sugar
  • 4 very ripe bananas
  • 1 teaspoon McNess Champion Madagascar Vanilla Compound
  • 1/2 cup vegetable oil
  • 1-1/2 cups chopped walnuts or pecans

INSTRUCTIONS

  1. Preheat the oven to 350 degrees F.
  2. In a medium bowl, combine the flour, baking soda, baking powder salt and cinnamon, set aside.
  3. In a large bowl, cream together the eggs and sugar.
  4. Stir in the mashed bananas, vanilla and oil.
  5. Stir in the flour mixture; a third at a time until it is just combined.
  6. Stir in the walnuts or nuts of your choice until just combined,
  7. Pour the batter into a 9X5 inch load pan.
  8. Bake for approximately 55-60 minutes; test with a wooden toothpick. When it comes out with very few crumbs, it is done.
  9. Let cool on a wire rack for approximately 20 minutes then turn onto the wire rack to cool completely.
  10. Serve with warm butter, honey or your favorite preserves.
  11. Store in airtight container for up to 7 days.

Optional

If you prefer pecans instead of walnuts or another favorite nut, you may substitute or if you prefer raisins, add one cup to the batter before baking.
