INGREDIENTS
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup butter, softened
- 1/2 cup milk
- 1 tablespoon lemon juice
- 3 tablespoons lemon zest
- 1-1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup fresh blueberries
INSTRUCTIONS
- Preheat your oven to 350 degrees F. Spray with baking spray (Baker’s Joy) or grease with butter and set aside a standard loaf pan.
- Inside a large mixing bowl, add the butter and sugar and beat together until combined.
- Beat in the eggs, one at a time, adding the second egg just after the first one is fully incorporated.
- Mix in the milk, lemon juice and lemon zest.
- In a medium bowl, whisk together the flour, baking powder and salt. Add into the wet mixture and beat until just combined. Stir in the blueberries and make sure not to overmix.
- Pour the batter into the prepared pan and smooth out into an even layer with a spatula.
- Bake in the oven for 50-60 minutes until a toothpick inserted comes out clean.
- Remove and place on a baking rack in the pan to cool.
- Let the bread sit in the pan for approximately 15-20 minutes to cool and then remove and place on cooling rack until room temperature.
- If desired, add your favorite glaze as a finishing touch. Serve immediately.
