Lemon Blueberry Bread

INGREDIENTS

  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup butter, softened
  • 1/2 cup milk
  • 1 tablespoon lemon juice
  • 3 tablespoons lemon zest
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries

INSTRUCTIONS

  1. Preheat your oven to 350 degrees F. Spray with baking spray (Baker’s Joy) or grease with butter and set aside a standard loaf pan.
  2. Inside a large mixing bowl, add the butter and sugar and beat together until combined.
  3. Beat in the eggs, one at a time, adding the second egg just after the first one is fully incorporated.
  4. Mix in the milk, lemon juice and lemon zest.
  5. In a medium bowl, whisk together the flour, baking powder and salt. Add into the wet mixture and beat until just combined. Stir in the blueberries and make sure not to overmix.
  6. Pour the batter into the prepared pan and smooth out into an even layer with a spatula.
  7. Bake in the oven for 50-60 minutes until a toothpick inserted comes out clean.
  8. Remove and place on a baking rack in the pan to cool.
  9. Let the bread sit in the pan for approximately 15-20 minutes to cool and then remove and place on cooling rack until room temperature.
  10. If desired, add your favorite glaze as a finishing touch. Serve immediately.
