Delightful Almond Pound Cake

INGREDIENTS

  • 3 cups all-purpose flour
  • 2 1/2 cups granulated sugar
  • 1 teaspoon baking powder
  • 5 extra large eggs
  • 3 sticks butter (softened at room temperature)
  • 8 ounces cream cheese
  • 2 teaspoon McNess Almond Extract
  • 1 teaspoon McNess Champion Madagascar Vanilla Compound
  • 1 cup buttermilk (room temperature)

Almond Glaze

  • 3 cups confectioner’s sugar
  • 3-5 tablespoons milk
  • 1/2 teaspoon McNess Almond extract

INSTRUCTIONS

  1. Preheat oven to 325 degrees F. Grease and flour a large bundt pan that holds at least 15 cups of batter or use baking spray.
  2. In a medium size bowl, whisk together the flour and baking powder and set aside.
  3. Use a large stand mixer or hand-held mixer, cream the butter and cream cheese in a large bowl until fully combined. Add the granulated sugar until completely incorporated.
  4. Add the almond and vanilla extracts and mix until just combined.
  5. Add the eggs one at a time until just incorporated.
  6. Add the flour mixture and the buttermilk alternately until fully incorporated, beginning and ending with the flour mixture.
  7. Pour batter evenly into prepared pan. Put bundt pan on heavy bottomed cookie sheet and bake in the oven for 50 minutes.
  8. After the 50 minutes are complete, check the cake for the color, if it is browning quickly, put an aluminum foil “tent” over the cake pan very loosely and let continue to bake for approximately 20 more minutes.
  9. Check the cake for doneness with a toothpick inserted in the center. If it comes out clean or with a few crumbs, remove the cake from the oven and put on a wire rack for 20 to 30 minutes and then invert onto the wire rack to cool completely.
  10. Make the Almond Glaze while waiting for the cake to cool completely.
  11. By hand, whisk together the confectioner’s sugar, milk and almond extract. Whisk until desired consistency is achieved. Add more or less milk to desired consistency.
  12. Place cake on a serving plate and pour glaze evenly over the entire cake. Enjoy!
