Chocolate-Banana Loaf Surprise

INGREDIENTS

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs, lightly beaten
  • 1 1/2 cup mashed bananas (4 to 5 medium)
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon McNess Champion Madagascar Vanilla Compound
  • 1 cup milk chocolate chips
  • 1 cup coarsely crushed graham crackers
  • 1 cup marshmallow bits

INSTRUCTIONS

  1. Preheat oven to 350 degrees F. Grease a 9X5 inch loaf pan. In a large bowl stir together dry ingredients.
  2. In a medium size bowl, combine the wet ingredients and stir carefully into the flour mixture. Stir only until just moistened.
  3. Fold in 3/4 cups of the chocolate chips, 3/4 cup of the graham crackers and 3/4 cup of the marshmallow bits. Transfer batter to prepared pan.
  4. In a small bowl, combine the remaining 1/4 cup each chocolate chips, graham crackers and marshmallow bits. Sprinkle over the batter.
  5. Bake about 1 hour or until a toothpick inserted in the center comes out clean. Cover with aluminum foil the last 10 minutes of baking to prevent overbrowning.
  6. Cool in pan on a wire rack for 10 minutes.
  7. Remove from pan. Cool completely on wire rack.
  8. Cut into desired size slices and enjoy!
