Apple Fritter Bread

INGREDIENTS

  • 1-1/4 cups tart cooking apples, such as Granny Smith, peeled, cored and finely chopped
  • 1/4 cup packed brown sugar
  • 1 teaspoon McNess ground cinnamon
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/3 cup butter, softened
  • 2 large eggs, slightly beaten
  • 1/2 cup whole milk
  • 1 teaspoon McNess Champion Madagascar Vanilla Compound

CREAM CHEESE ICING

  • 4 oz. cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla
  • 1/4 cup heavy whipping cream

INSTRUCTIONS

  1. Preheat oven to 350 degrees F. Grease an 8X4 inch loaf pan.
  2. In a medium bowl, combine finely chopped apples, brown sugar and cinnamon. In another medium bowl, combine flour, baking powder and salt.
  3. In a medium size mixing bowl, beat granulated sugar and butter until combine. Beat in eggs, milk and vanilla.
  4. Add in flour mixture; stir until combined. Pour half the batter into prepared pan. Add half the apple mixture. Spread remaining batter over apple layer in pan. Top with remaining apple mixture. Lightly pat apples into batter. Use a table knife to swirl apples into batter.
  5. Bake about 1 hour or so or until toothpick inserted in center comes out clean.
  6. Cover loaf with aluminum foil the last 10 minutes of baking to prevent overbrowning.
  7. Cool in pan on a wire rack 10 minutes. Remove from pan.
  8. Cool completely on a wire rack. While loaf is cooling, prepare Cream Cheese Icing.
  9. In a medium bowl or stand mixer, combine softened cream cheese, powdered sugar and vanilla. Add heavy whipping until desired consistency is reached.
  10. Pour or drizzle Cream Cheese Icing over loaf. Cut into desired size slices and serve! 🙂
