3-Layer Key Lime Cake with Key Lime Frosting

INGREDIENTS

Cake

  • (15.25 ounce) package lemon cake mix
  • 1 cup vegetable oil
  • ¾ cup orange juice
  • large eggs
  • 2 tablespoons fresh key lime juice or bottled key lime juice
  • 1 (3 ounce) package lime flavored Jell-O® mix

Frosting

  • (8 ounce) package cream cheese, softened
  • ½ cup butter (1 stick)
  • 4 cups confectioner’s sugar
  • 3 tablespoons fresh key lime juice or fresh bottled key lime juice

INSTRUCTIONS

  1. Preheat the oven to 350 degrees F. Grease three 8-inch round cake pans.
  2. Beat cake mix, oil, orange juice, key lime juice, eggs, and gelatin mix in a large bowl until well combined. Pour into the prepared cake pans.
  3. Bake in the preheated oven until a toothpick inserted into the center of a cake layer comes out clean, 16 to 18 minutes. Allow cake layers to cool completely.
  4. Meanwhile, make the frosting.
  5. Beat cream cheese and butter in a large bowl until light and fluffy.
  6. Add confectioner’s sugar and lime juice; mix until well combined.
  7. Fill and frost cooled cake layers.
  8. Serve immediately.
